The importance of establishing gluten free standard in the service industry is one of my greatest motivations. The days of strolling about and grabbing a hot dog or heading into Joe’s pizza for “a slice” - are over. But I am hopeful that someday myself and others with this condition can experience the same spur-of-the-moment convenience of selection that I once enjoyed.
